What makes it different from most kunafa sold here

The dough. Kunafa is built on kataifi – fine shredded phyllo – and almost all of it in India is imported frozen, arriving weeks after it was made. Repeated freezing makes the strands brittle, so they break into fragments instead of holding together as long threads.

Eating it at its best

Kunafa is a warm dessert. Eat it the day it arrives, and reheat briefly rather than at high heat if it has cooled. Do not freeze it – the cheese and the pastry both suffer.
