Kataifi Dough for Restaurants
Putting kunafa on a restaurant menu in India usually fails for one reason: supply. The dessert sells, then the imported dough runs out, the replacement batch handles differently, and the dish quietly disappears from the menu. We manufacture kataifi dough in Mumbai specifically so restaurant kitchens can run it as a permanent menu item instead of a special.
What restaurants actually need from a dough supplier
- The same dough every time. If the strand thickness changes between deliveries, your bake time changes, and the dish your customer had last month is not the dish they get today.
- Predictable delivery. A dessert you cannot guarantee is a dessert you cannot put on a printed menu.
- A rate you can cost against. You need a per-portion food cost that holds, not a price that moves with an importer’s freight bill.
- Someone who knows the product. When a tray comes out wrong, you want a supplier who can tell you why.
Why fresh beats imported frozen in a working kitchen
Imported kataifi arrives having been made weeks earlier and frozen in transit. Each freeze-thaw cycle makes the strands brittle, so instead of separating they shatter into short fragments. You lose the long-strand texture that makes kunafa look like kunafa, and your prep time goes up because the dough fights you.
Fresh dough stays pliable, pulls apart cleanly, takes butter evenly and browns without scorching at the edges. For a line cook working through service, that difference is measured in minutes per tray.
Beyond kunafa
Most restaurants buy kataifi for kunafa and then find other uses for it:
- Wrapped around prawns, chicken or paneer for a crisp fried starter.
- Baked into nests as a plated dessert base.
- Toasted and folded into filled chocolate, which is where the current kunafa chocolate bar demand comes from.
- As a crunch element scattered over ice cream or a mousse.
If your chef has not worked with it before, our guide to handling kataifi dough covers thawing, separating, buttering and baking.
Pack sizes and scheduling
We supply 1 kg, 5 kg and 10 kg packs and custom quantities. Restaurant accounts usually settle into a standing weekly or twice-weekly order, which is both cheaper and more reliable than calling each time you run low. We deliver across Mumbai, Thane and Navi Mumbai.
What it costs
The rate depends on quantity per drop, how often you order, packaging and distance. We do not publish a fixed rate card because a 1 kg one-off and a standing 10 kg weekly order are not the same business. The full explanation is on kataifi dough price in Mumbai.
Menu ideas built on this dough
If you are working out what to put on the dessert card, start with what already sells. Cheese Kanafeh is the safe listing, Nabulsi Cheese Kanafeh the one that impresses guests who know the dish, and Nutella Kanafeh the one that sells to everyone else. Full kanafeh range.
Frequently asked questions
How much kataifi dough does one kunafa tray need?
It depends on your tray size and how thick you build the base and lid. As a working figure most kitchens use roughly 400 to 600 g of dough for a standard full tray split into a base and a top layer. We will help you pin down your own number when you order.
Can you supply on a fixed weekly schedule?
Yes, and that is how most of our restaurant accounts run. A standing order is cheaper for us to produce and route, and that shows up in your rate.
What happens if my volumes spike for an event?
Tell us as early as you can and we will build it into the batch. Short-notice increases are usually possible but depend on what is already committed for that run.
Do you provide help getting the recipe right?
Yes. We have been making kanafeh for years and we will walk your chef through butter ratio, layer thickness, oven temperature and syrup timing. It costs you nothing and it saves us both a complaint later.
Do you supply finished kanafeh as well as dough?
We do both. Some restaurants take the dough and build their own; others buy finished desserts to plate. Tell us which model you want and we will quote accordingly.
