Kataifi Dough for Hotels and Banquet Kitchens

A banquet kitchen cannot run a dessert it might not be able to make next week. That is the reason kunafa appears on so many Indian hotel menus as a one-off special and then quietly disappears – not because it does not sell, but because the dough supply was never reliable enough to commit to.

We manufacture kataifi dough in Mumbai so hotel and banquet kitchens can plan around it.

What a banquet kitchen needs that a small kitchen does not

  • Volume on a date. A 400-cover function is not a larger version of a normal day. The quantity has to be committed in advance and it has to arrive.
  • Consistency across a long service. If tray twelve behaves differently from tray one, the last guests get a different dessert from the first.
  • Prep that scales. Dough that has to be coaxed apart by hand is manageable for two trays and a serious problem for twenty.
  • A costing that holds. Banquet menus are priced well in advance. A moving ingredient cost is a real problem.

Why imported frozen dough fails at this scale

Imported kataifi reaches an Indian kitchen weeks after it was made, usually having been frozen and thawed more than once. Those strands turn brittle and shatter into fragments instead of pulling apart.

At two trays that is an annoyance. At twenty it is a measurable loss – more of every kilo ends up on the bench, and prep time per tray climbs at exactly the moment your team has least of it.

Fresh dough separates cleanly, takes butter evenly and browns without the edges scorching before the centre sets.

Beyond the dessert section

Hotel kitchens tend to find more uses for kataifi than restaurants do:

  • Live dessert counters – kunafa assembled and baked in front of guests, which is a genuine draw at a wedding or a large buffet.
  • Canapés and starters – wrapped around prawns, chicken or paneer and fried for a crisp bite.
  • Plated desserts – baked nests as a base, or toasted strands as a crunch element.
  • Filled chocolate for turndown or gifting, riding the kunafa chocolate demand.

Pack sizes and scheduling

We supply in 1 kg, 5 kg and 10 kg packs and in custom quantities. Hotel accounts usually settle into a standing weekly order with the flexibility to scale up for booked functions. Delivery covers Mumbai, Thane and Navi Mumbai.

If your chef has not worked with kataifi before, our handling guide covers thawing, separating, buttering and baking, and how much dough a tray takes will help with the costing.

Use our weekly kataifi dough order planning guide to estimate regular usage, event demand and a suitable reorder point.

What it costs

The rate depends on quantity per delivery, how often you order, packaging and distance. We do not publish a fixed rate card, because a one-off function order and a standing weekly account are genuinely different. The full explanation is on kataifi dough price in Mumbai.

Frequently asked questions

Can you supply enough kataifi dough for a banquet function?

Yes. Tell us the cover count and the date and we will build it into the production run. Large functions need notice – the more warning we get, the easier it is to guarantee the quantity.

Do you deliver to hotel kitchens directly?

Yes, across Mumbai, Thane and Navi Mumbai. Deliveries go to the kitchen entrance on your schedule rather than a retail counter.

Can we run kunafa as a permanent buffet item?

That is what a standing order is for. Agree a weekly quantity and it gets produced on schedule, so the dish stays on the buffet instead of appearing and disappearing.

Is the dough consistent between deliveries?

Yes – that is the point of manufacturing rather than importing. Uniform strand thickness means your bake time does not change from one delivery to the next.

Do you supply finished desserts as well as dough?

Both. Some hotels take the dough and build in-house; others buy finished kanafeh and baklava to plate. Tell us which model suits your kitchen.
